Roman mugwort is a food source for 71 different wild bee species. Also known as Pontic wormwood, it softens the bitter taste in absinthe, which is caused by wormwood (Artemisia absinthium). The population in Rhineland-Palatinate is likely a relic from Roman times, but the plant is now disappearing there.

Aromatic herb. Roman mugwort can be used in cooking as an aromatic, slightly bitter spice – but only if it is harvested at the right time. The ideal time is between July and October, just before the plant begins to flower. Only the young shoot tips and closed flower buds are used, as the leaves become significantly more bitter once the plant flowers. In the kitchen, mugwort goes particularly well with hearty dishes. It is traditionally used to season fatty meats (e.g., goose or pork), but also for vegetable dishes, stews, or stuffings. Use sparingly, as the aroma is quite strong. Mugwort should be used sparingly because it has a very intense flavor when dried and a milder taste when fresh. Its bitter aroma pairs well with herbs such as thyme, rosemary, savory, as well as garlic and pepper. Marjoram can be used as a substitute, but it is considerably milder.
